Defining Characteristics: 

• Crassocephalum crepidioides is a leafy green vegetable known for its distinctive two-tone leaves: green on top and purple underneath
• Although Crassocephalum crepidioides' common name is Okinawa spinach they are not true spinach and have nowhere near the levels of oxalic acid that our domestic spinach does. They're safe and healthy for critters to eat in moderation!
• Grows as a ground cover
• Rich in antioxidants, iron, and vitamins A & C
